Quinoa Green Goddess Salad Bowl

Ingredients for salad bowl:

  • 1 cup quinoa
  • 2 cups water
  • 1 hard boiled egg
  • 1 cup edamame beans
  • 5 ea breakfast radish quartered
  • 2 cups arugula
  • 1 cup baby spinach

Ingredients for green goddess dressing:

  • 2 tsp anchovy paste or 2-4 canned anchovies
  • 2 cloves garlic minced
  • ¾ cup mayo
  • ¾ cup sour cream
  • ½ cup chopped flat leaf parsley
  • ½ cup chopped tarragon
  • 2 bunch chopped chives
  • 2 tablespoons lemon juice
  • 2 tablespoons champagne vinegar

Directions to make salad dressing:

Super simple add all ingredients into a blender or food processor and blend to a smooth consistency, add your salt and pepper to taste and done

Directions to making salad bowl

Put 1 cup of quinoa to 2 cups of water in a pan bring to a boil then lower your heat to a simmer and cover cook for about 12 to 15 minutes until fluffy. To toast your sunflower seeds, coat your seeds with a little olive oil and season with salt and pepper.  Transfer seeds to a baking sheet and place in a 350 degree oven for about 5 minutes. To make your hard boiled egg get a pot of boiling water going add your egg and cook for 10 minutes take your egg out and run under cold water. I find it easier to peel under running water. Add all of your ingredients for the salad into a bowl and mix the warm quinoa in, it will wilt the greens a little add your dressing and its ready to serve.
